How to Make the Best Homemade Fudge

Fudge

You will need…

100g unsalted butter

550g caster sugar

350ml double cream

200g golden syrup

1 teaspoon vanilla extract

½ teaspoon sea salt flakes

23cm x 23cm baking tray, lined

To prepare the fudge, put the butter, cream, sugar and syrup in a large saucepan and heat until the sugar has dissolved, stirring constantly. Simmer for a further 15-20 minutes (whilst still stirring) until the temperature reaches 116 degrees centigrade. Remove from the heat then stir in the salt and vanilla extract, and continue to stir vigorously until the mixture thickens and loses its sheen. Pour into the baking tray when ready and leave to set at room temperature. Once ready and cut into squares, it can be stored in the fridge.
