250g plain flour

¼ teaspoon bicarbonate of soda

¼ teaspoon salt

175g unsalted butter, melted and slightly cooled

150g soft brown sugar

100g caster sugar

1 teaspoon vanilla extract

1 free range egg

1 free range egg yolk

How to Bake

  • Heat your oven to 170 degrees centigrade/gas mark 3.

  • Soft the flour, bicarb and salt into a bowl and leave to one side.

  • Bake for 10-15 minutes. To get the right chewy texture, it’s best slightly under bake than over bake – they may look undercooked but the dough will harden once they start to cool and develop the essential chewiness.
