Good gravy requires extras and one simple and straight forward way to add richness from the get go is by finely slicing onions and carrots then sitting your joint on top of these extra vegetables. Before you put your roasting joint in the oven, pour a small amount of water in the bottom of the roasting tin (about 1-2cm deep) – this will prevent burning the juices and veg and will leave you with a rich liquor that will provide the gravy base. Once bubbling, sprinkle in a heaped tablespoon of plain flour and whisk thoroughly, making sure it doesn’t get stuck. Gradually pour in your potato water from earlier, stirring constantly until your gravy starts to thicken. Once you have the right consistency, remove from the heat and pass through a sieve to remove any lumps. Add further seasoning if required (although if your joint was well seasoned, this shouldn’t be necessary). And keep warm before serving!
