How to Make Summer Pudding

You will need…

1kg miSummer Puddingxed summer berries (fresh or frozen)

150g caster sugar

3 tablespoons of water

7 slices of white bread

A 1.25 litre pudding bowl or basin

 

One way you can save money straight off is by buying frozen fruit instead of fresh. Of course, traditionally summer pudding was made using fresh fruit precisely because it is in season at this time of year, but if you want the extra convenience at a fraction of the price, there’s nothing wrong with using this method too.

How to prepare…

  • Place the water and sugar in a large saucepan or stock pot and simmer until the sugar has melted. Add the fruit and keep on a low heat for 3 minutes. Stir a couple of times, but don’t over work it as the fruit should stay intact. Once heated, pass through a sieve and keep both the fruit and juice to one side.

  • Cut the crusts off all the slices of bread. Leave 1 slice whole, cut 4 slices in half lengthways, and the last 2 slices into 4 triangles each.

  • Line your pudding basin with cling film, but leave a 20cm overlap around the edge.

  • Soak the whole slice of bread in the juice then place in the bottom of the basin. Repeat with the bread halves and line the sides of basin with them, pressing them all down to seal.

  • Carefully spoon the fruit into the basin. Soak the remaining bread triangles and arrange them on top so they cover the fruit.

  • Cover with the overlapped cling film and weigh down the surface with a plate. Chill for 6 hours.

  • Once ready, remove the plate and cling film from the top and cover with a large serving plate. Tip upside down, remove the basin and remaining cling film and serve with thick cream or ice cream.
